LIME
The Lime (Citrus Aurantifolia) originated in Asia and is, according to some authors, a natural hybrid of Citrus Medica (the Citron) and another species. It’s a small, irregularly shaped tree which grows to 3-5 metres with spiny branches. The leaves are oval in shape, round at the base and pointed at the tip, and light green. The fruit are slightly oval shaped and mostly green or yellow-green, although there are some examples with fruit which are yellow in colour when mature. The flesh is acidic and the peel is think and rich in essential oils. The lime is cultivated primarily for its oils which are obtained from the peel. It has an intense flavour, a flowery fragrance and the juice is refreshing and free of fats and calories. It’s rich in vitamin C, contains antioxidants and boosts the immune system, it also contains minerals, mainly of Potassium, is a natural antacid and aids digestion. It contains only 14 calories per 100g.
